Ingredients

  • 4 duck breast fillets wild
  • 2 sprigs fresh rosemary
  • 1 shallot medium
  • 2 cloves fresh garlic
  • 2 tablespoons steak seasoning Monterrey
  • 1/2 cup olive oil

Method

  • Cut each duck breast into 3 strips
  • Place rosemary leaves, shallot and garlic in food processor and pulse a few times, or chop coarsely by hand
  • Combine vegetables, seasoning and oil in a bowl and add the duck pieces
  • Marinate for 30-60 minutes
  • Heat a dry 10" non-stick pan on high until it begins to smoke
  • Add the duck pieces and let sear in place for about 1 minute (don't move pieces around!)
  • Use tongs to turn over the duck and let sear for 30 seconds longer
  • Serve immediately!
