- 8 ounces fresh tortellini with cheese
- 14 cup red wine vinegar
- 3 tablespoons olive oil
- 2 cups frozen French-cut green beans, thawed
- 1 large tomatoes, chopped
- 12 red bell pepper, chopped
- 2 scallions, chopped
- 14 cup chopped fresh basil
- 14 teaspoon salt
- 18 teaspoon pepper
Method
- In a large pot of boiling salted water, cook tortellini until just tender, 7-8 minutes.
- Stir in all remaining ingredients.
- Mix well.
- Adjust seasonings to taste.
