Ingredients

  • 2 c. sugar
  • 1 1/2 c. Fiber One cereal, crushed
  • 2/3 c. vegetable oil
  • 2 c. pumpkin or squash
  • 6 egg whites
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1/2 c. raisins or chopped nuts or both

Method

  • Heat oven to 350°.
  • Grease and flour a 15 1/2 x 10 1/2 x 1-inch pan.
  • Mix sugar, cereal, oil and pumpkin in large bowl. Let stand 10 minutes.
  • Stir in egg whites until well blended. Stir in remaining ingredients.
  • Pour into pan; spread evenly. Bake 25 to 30 minutes.
  • Cool.
  • Frost with cream cheese frosting.
