Ingredients
- 1 lb. ground beef
- 1/2 bell pepper, chopped
- 1 Tbsp. shortening
- 1/2 c. uncooked rice
- 2 1/2 c. tomato juice
- 1/8 tsp. pepper
- 1 small onion
- salt and pepper to taste
Method
- Combine beef, rice, salt and pepper in large bowl until well mixed.
- Form into small balls (1 1/2-inch) and place in large baking dish.
- Brown onion and bell pepper in shortening.
- Add tomato juice, salt and pepper and pour over meatballs.
- Cover dish with lid or foil and bake at 350° for 1 hour.
