Ingredients
- 1/2 c. dry rice
- 3 eggs
- 1 can evaporated milk (13 oz.)
- 1/2 c. sugar
- 1/8 stick melted margarine
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- nutmeg
Method
- Cook rice; set aside.
- In 1 1/2-quart baking dish or bowl, beat eggs, then add sugar and milk.
- Spoon-stir until well blended.
- Add rice and spoon-stir again.
- Add melted margarine.
- If consistency is too thick, add a little more milk.
- Taste for sweetness.
- Add vanilla and cinnamon; stir thoroughly.
- Sprinkle with nutmeg and bake at 350° for approximately 30 to 40 minutes.
