Ingredients

  • 1/2 c. dry rice
  • 3 eggs
  • 1 can evaporated milk (13 oz.)
  • 1/2 c. sugar
  • 1/8 stick melted margarine
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • nutmeg

Method

  • Cook rice; set aside.
  • In 1 1/2-quart baking dish or bowl, beat eggs, then add sugar and milk.
  • Spoon-stir until well blended.
  • Add rice and spoon-stir again.
  • Add melted margarine.
  • If consistency is too thick, add a little more milk.
  • Taste for sweetness.
  • Add vanilla and cinnamon; stir thoroughly.
  • Sprinkle with nutmeg and bake at 350° for approximately 30 to 40 minutes.
