Ingredients

  • 1 c. persimmon pulp
  • 1 tsp. baking soda
  • 1 c. sugar
  • 1/2 c. margarine or butter
  • 1 egg
  • 2 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/2 tsp. salt
  • 1 c. chopped walnuts
  • 1 c. raisins (optional)

Method

  • Beat persimmon pulp, soda, sugar and margarine until creamy. Beat in egg, then add flour, cinnamon, nutmeg, cloves and salt. Fold in walnuts and raisins. Drop by spoonfuls on greased baking sheet. Bake at 375° for 12 to 15 minutes.
  • Makes about 3 dozen.
