Ingredients

  • 1 1/2 c. self-rising flour
  • 1/2 c. butter (cold)
  • 1/2 c. sugar
  • 1 egg (slightly beaten)
  • 1 tsp. vanilla
  • 1 c. raspberry jam (seedless)
  • 1 - 10 oz. pkg. peanut butter chips

Method

  • Preheat oven to 375°.
  • Stir flour, sugar, and butter until it resembles coarse crumbs.
  • Add egg and vanilla and blend well. Reserve 1/2 c. mixture for later.
  • Pour remaining mixture in baking pan and bake 10 minutes until lightly brown.
  • Remove from oven and spread jam over warm crust.
  • Sprinkle with 1 cup of peanut butter chips.
  • Mix together reserved crust mixture and remaining peanut butter chips and sprinkle over top.
