Ingredients

  • 1 c. brown sugar
  • 1/2 c. oil
  • 1 egg
  • 2 tsp. vanilla
  • 1 c. sour milk
  • 1 1/2 c. chopped rhubarb
  • 1/2 c. walnuts (optional)
  • 2 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt

Method

  • Beat brown sugar, oil, egg, vanilla and sour milk.
  • Add rhubarb and nuts.
  • Mix in flour, soda, baking powder and salt. Stir until moistened.
  • Sprinkle with topping made of 2 teaspoons melted oleo, 2/3 cup of white sugar and 1 teaspoon of cinnamon. Bake at 375° for 20 to 25 minutes.
  • Makes about 18.
