Ingredients

  • 3 tablespoons butter
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 3 tablespoons flour
  • 1 cup milk (can add more if it thickens too much)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup diced cooked potato
  • 2 cups diced ham
  • 1/4 teaspoon pepper
  • 1/8 teaspoon cayenne (or to taste)
  • 1/4 teaspoon salt (or can omit since ham and cheese are salty)

Method

  • Melt butter in a large Dutch oven or oven safe heavy bottom pot.
  • Add onions and celery and saute for 1-2 minutes until softened.
  • Whisk in flour and cook for 1-2 minutes.
  • Whisk in milk a little at a time and cook until just beginning to boil and sauce has thickened.
  • Remove from heat and add 1 and 1/2 cup of the cheese and stir until incorporated.
  • Stir in sour cream.
  • Add ham, potatoes, corn and peas.
  • Cover and place in 375 F (190 C) oven for 25 minutes.
  • Remove cover, sprinkle remaining cheese on top and cook for additional 5 minutes.
