Ingredients

  • 1 c. cooked long grain rice (cooked without salt or fat)
  • 1/2 c. chopped celery
  • 1/4 c. finely chopped green onions
  • 1/4 c. chopped sweet red pepper
  • 2 Tbsp. slivered almonds, toasted
  • 1/4 c. commercial oil free Italian dressing
  • 2 tsp. vinegar
  • 1 tsp. curry powder

Method

  • Combine first 5 ingredients in a medium bowl.
  • Combine Italian dressing, vinegar and curry powder.
  • Add to rice mixtures and toss well.
  • Cover and chill.
  • Yields 4 servings; about 95 calories per 1/2 cup serving.
