Ingredients
- 1 c. cooked long grain rice (cooked without salt or fat)
- 1/2 c. chopped celery
- 1/4 c. finely chopped green onions
- 1/4 c. chopped sweet red pepper
- 2 Tbsp. slivered almonds, toasted
- 1/4 c. commercial oil free Italian dressing
- 2 tsp. vinegar
- 1 tsp. curry powder
Method
- Combine first 5 ingredients in a medium bowl.
- Combine Italian dressing, vinegar and curry powder.
- Add to rice mixtures and toss well.
- Cover and chill.
- Yields 4 servings; about 95 calories per 1/2 cup serving.
