Ingredients
- 3 c. diced rhubarb, put in pie shell
- 1 c. sugar
- 1 Tbsp. flour
- 1 egg, beaten
- 3/4 tsp. grated lemon rind
- 1 Tbsp. lemon juice
- 1/2 c. water
Method
- Combine sugar and flour; stir in egg, lemon rind and juice and water.
- Cook over boiling water until slightly thickened.
- Pour over rhubarb in pie shell.
- Top with a lattice crust.
- Bake at 425° for 40 to 50 minutes.
- Makes a 2 crust 9-inch pie.
