Ingredients

  • 2 tbsp vegetable oil
  • 1 None flatbread, cut into 3/4 inch pieces
  • 2 tsp ground sumac
  • 1 None cucumber, coarsely chopped
  • 1 small green pepper, seeded and coarsely chopped
  • 1 small red pepper, seeded and coarsely chopped
  • 1 small red onion, coarsely chopped
  • 7 oz cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh mint
  • 2 tbsp French dressing

Method

  • Heat oil in a large skillet on medium-high heat. Add bread; cook and tum for 5 mins or until golden. Drain on paper towels. Sprinkle sumac over bread.
  • Place cucumber, peppers, onion, tomatoes, parsley, mint and bread in a large bowl; toss to combine. Add dressing; toss to coat.
