Ingredients

  • 1 c. Uncle Ben's long grain rice
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 c. raisins
  • 1/2 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 can evaporated milk plus 1/2 can hot water
  • 2 eggs, separated

Method

  • Cook the rice in a pot with 2 1/2 cups of water.
  • Add salt and cook until rice is tender.
  • Add can of evaporated milk plus 1/2 can of hot water to the cooked rice.
  • Add sugar, raisins, vanilla and cinnamon and the 2 egg yolks that have been slightly beaten.
  • Beat the egg whites with a heaping teaspoonful of sugar until stiff.
  • Add them to the pudding.
  • Put the rice pudding into a bowl that has been greased and put the bowl in a pan of hot water.
  • Bake in the oven at 350° for 30 to 45 minutes.
  • You can also use 4 small aluminum pans.
