Ingredients
- 1 c. Uncle Ben's long grain rice
- 1 c. sugar
- 1/2 tsp. salt
- 1 c. raisins
- 1/2 tsp. vanilla
- 1 tsp. cinnamon
- 1 can evaporated milk plus 1/2 can hot water
- 2 eggs, separated
Method
- Cook the rice in a pot with 2 1/2 cups of water.
- Add salt and cook until rice is tender.
- Add can of evaporated milk plus 1/2 can of hot water to the cooked rice.
- Add sugar, raisins, vanilla and cinnamon and the 2 egg yolks that have been slightly beaten.
- Beat the egg whites with a heaping teaspoonful of sugar until stiff.
- Add them to the pudding.
- Put the rice pudding into a bowl that has been greased and put the bowl in a pan of hot water.
- Bake in the oven at 350° for 30 to 45 minutes.
- You can also use 4 small aluminum pans.
