Ingredients

  • 6 cups Boiled, And Cubed Chicken Breast
  • 3/4 cups Toasted Slivered Almonds
  • 1 cup Chopped Celery
  • 1/2 cups Finely Chopped Sweet Onion
  • 1 cup Dried Cherries, Rough Chopped
  • 1 cup Mayonnaise
  • 1/2 cups Sour Cream
  • 1 teaspoon Sugar
  • 1/2 whole Lemon, Juiced
  • 1 teaspoon Seasoning Salt

Method

  • Prep chicken and nuts ahead:
  • Boil chicken breast, cool, and cut into small cubes.
  • Toast nuts on a baking sheet for 3 minutes in a 350F oven.
  • Assembling salad:
  • Combine cubed chicken, chopped celery, onion, and cherries in a mixing bowl.
  • Mix together mayonnaise, sour cream, sugar, lemon juice, and seasoning salt in a smaller mixing bowl. Whisk together until smooth.
  • Pour salad dressing over chopped ingredients and fold together. Fold in toasted nuts.
  • Serve alone, or on bread. We really enjoy this salad on croissants. Delicious!
