Ingredients

  • 2 cups dried garbanzo beans
  • 1 small yellow onion
  • 1 bunch of fresh mint
  • 12 bunch fresh cilantro
  • 3 garlic cloves
  • 1 egg
  • 1 slice bread
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons cumin
  • 1 lemon, juice of

Method

  • Soak chickpeas overnght and drain 2 hours before cooking.
  • This will allow them to air-dry a little bit.
  • Pulse all ingredients in a food processor until completely smooth.
  • Work in batches if necessary.
  • Form into patties and fry in olive oil over medium heat for 3 mintues each side (or until golden brown).
  • Serve with pita bread, tzatziki, shredded lettuce and tomato.
