Ingredients
- 1 can fresh crabmeat
- 2 c. milk
- 2 Tbsp. flour
- 1 Tbsp. dry mustard
- 2 Tbsp. butter
- 1/2 tsp. salt
- 2 egg yolks
- red pepper
Method
- Mix together flour, mustard, salt and red pepper.
- Melt butter; add dry ingredients and 1/2 cup milk.
- Let come to a boil and cook for 5 minutes.
- Beat egg yolks until light.
- Add 1/2 cup milk.
- Add this mixture to sauce and continue to cook (slowly) for another 5 minutes.
- Add 2 tablespoons sherry, if desired.
- Combine crab and sauce thoroughly.
- Serve in shells.
- Serves 4 people.
