Ingredients

  • 1 can fresh crabmeat
  • 2 c. milk
  • 2 Tbsp. flour
  • 1 Tbsp. dry mustard
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • 2 egg yolks
  • red pepper

Method

  • Mix together flour, mustard, salt and red pepper.
  • Melt butter; add dry ingredients and 1/2 cup milk.
  • Let come to a boil and cook for 5 minutes.
  • Beat egg yolks until light.
  • Add 1/2 cup milk.
  • Add this mixture to sauce and continue to cook (slowly) for another 5 minutes.
  • Add 2 tablespoons sherry, if desired.
  • Combine crab and sauce thoroughly.
  • Serve in shells.
  • Serves 4 people.
