- Approx 5oz-Organic Mixed Greens - Bagged or by the pound
- (BABY LETTCE, FRISEE, RADICCHIO, MIZUNA, ARUGULA, BABY RED CHARD, AND BABY SPINACH)
- 1 crushed clove garlic
- 1 whole mango diced (1 cup frozen mangos diced if fresh not available)
- 1/3 cup unseasoned rice vinegar
- 2 tbs balsamic vinegar
- 2 tbs honey
- 1/4 cup orange juice
- 3 tbs olive oil
- 1/4 cup coarsely grated parmesan cheese
- 1 tea salt
- 1 tea pepper (may sub cayenne or red pepper for a little kick)
- 1 tea granulated sugar
- Optional ingredients:
- pine nuts
- dried cranberries
- gorgonzola
Method
- In a Large bowl wisk the ballsamic vinegar, rice vinegar, honey, orange juice, salt, pepper, sugar and garlic and then the olive oil slowly and completely. (I like to use a mini food processor instead.)
- Incude the mango into the mixture and coat lightly, you may let this stand up to a 1/2 hour. (best if you refrigerate)
- Toss the mango mixture again prior to adding the greens to the bowl and then toss again.
- Plate the greens and sprinkle the parmesen cheese on top. A lite amount of ground black pepper is a great addition.
- Optional ingredients may also be added at this time.
