- 2 Tbsp. shortening
- 1/4 c. sugar
- 1 egg
- 3/4 c. dark molasses
- 2 1/4 c. whole wheat flour
- 1 tsp. salt
- 3/4 c. yellow cornmeal
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 3/4 c. buttermilk
- 1/2 c. seedless raisins
Method
- Cream shortening and sugar.
- Beat in egg and molasses.
- Beat in remaining ingredients.
- Spoon into 2 well-greased 1 quart molds, filling a little more than half full.
- Cover with foil. Set molds on rack in deep kettle and add boiling water to come halfway up sides of molds.
- Cover and steam for 2 1/2 hours. Replace boiling water to keep up level of liquid.
