Ingredients

  • 2 Tbsp. shortening
  • 1/4 c. sugar
  • 1 egg
  • 3/4 c. dark molasses
  • 2 1/4 c. whole wheat flour
  • 1 tsp. salt
  • 3/4 c. yellow cornmeal
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 3/4 c. buttermilk
  • 1/2 c. seedless raisins

Method

  • Cream shortening and sugar.
  • Beat in egg and molasses.
  • Beat in remaining ingredients.
  • Spoon into 2 well-greased 1 quart molds, filling a little more than half full.
  • Cover with foil. Set molds on rack in deep kettle and add boiling water to come halfway up sides of molds.
  • Cover and steam for 2 1/2 hours. Replace boiling water to keep up level of liquid.
