Ingredients

  • 1 medium potato, cut into wedges
  • 1 medium 200 g firm white fish fillet, cut into 6cm pieces
  • 1/4 cup plain flour
  • 1 egg white lightly whisked
  • 1/4 cup corn flake crumbs
  • 1/2 lemon cut into wedges

Method

  • preheat oven to 200oC.
  • line 2 trays with aluminium foil.
  • place the potatoes on one test, spray with oil and bake for 25 mins or until tender.
  • meanwhile dip the fish pieces in the flour, egg white and crumbs.
  • place on the other tray and bake for 15-20 mins or until tender.
  • serve with lemon wedges and vegies
