Ingredients

  • 1/2 lb. ground beef
  • 1 c. chopped onions
  • 1 clove garlic, crushed
  • 1 pkg. frozen, chopped spinach, thawed
  • 3 c. cooked rice
  • 1 c. Mozzarella cheese (or other)
  • 4 eggs, beaten
  • 3/4 c. milk
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1 (15 oz.) can tomato sauce
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/2 c. grated Italian cheese
  • 1 tsp. garlic salt

Method

  • Saute beef,
  • onions
  • and
  • garlic
  • until
  • meat loses red color. Add spinach,
  • rice and cheese; mix well.
  • Mix milk and eggs, salt and
  • pepper
  • and
  • add
  • to
  • rice
  • mixture.
  • Place in shallow casserole.
  • Bake
  • at 350° for 30 minutes or until set. Meanwhile, blend
  • sauce
  • and
  • seasonings and simmer 5 minutes. Cut spinach meat mixture into squares.
  • Top with tomato sauce and grated Italian cheese.
