Ingredients
- 24 ounces grouper fillets
- 2 tablespoons fresh lime juice
- 6 tablespoons butter
- 3 teaspoons Dijon mustard
- 1 tablespoon honey
- 12 cup dry breadcrumbs
- 12 cup hazelnuts, finely chopped
- salt and pepper
- fresh parsley, finely chopped
Method
- Salt and pepper fish well on both sides.
- Preheat oven to 450.
- Melt butter and mix with lime juice, mustard, and honey, stirring well.
- Place fillets in glass baking dish and pour the butter mixture over, turning to coat both sides.
- Return to fridge or freezer briefly to allow the butter mixture to harden.
- Mix crumbs and hazelnuts, put on a plate, and remove fish from pan, turning them over in the crums/nuts until coated.
- Return to baking dish, place in oven and bake for about 10 minutes, until crispy and golden brown.
