Ingredients

  • 24 ounces grouper fillets
  • 2 tablespoons fresh lime juice
  • 6 tablespoons butter
  • 3 teaspoons Dijon mustard
  • 1 tablespoon honey
  • 12 cup dry breadcrumbs
  • 12 cup hazelnuts, finely chopped
  • salt and pepper
  • fresh parsley, finely chopped

Method

  • Salt and pepper fish well on both sides.
  • Preheat oven to 450.
  • Melt butter and mix with lime juice, mustard, and honey, stirring well.
  • Place fillets in glass baking dish and pour the butter mixture over, turning to coat both sides.
  • Return to fridge or freezer briefly to allow the butter mixture to harden.
  • Mix crumbs and hazelnuts, put on a plate, and remove fish from pan, turning them over in the crums/nuts until coated.
  • Return to baking dish, place in oven and bake for about 10 minutes, until crispy and golden brown.
