Ingredients
- 3 to 4 lb. dressed shad
- lemon and pepper seasoning
- 3 to 4 c. water or 1/2 water and white wine
- 2 stalks celery, broken in 2-inch pieces
- 1 Tbsp. instant minced onion or 1 small onion, chopped
- 2 bay leaves
Method
- Wash and dry shad.
- Sprinkle inside with lemon and pepper. Place fish on rack in baking pan.
- Add liquid to a level just below fish.
- Add rest of ingredients.
- Cover tightly.
- Let steam in a 350° oven for 5 hours.
- Baste frequently.
- Serves 6.
