Ingredients

  • 1/2 lb. ground turkey
  • 1/2 c. chopped onion
  • 1 clove garlic
  • 1/2 c. sliced carrots
  • 1 (16 oz.) can pinto beans (drained)
  • 1 (16 oz.) can tomatoes
  • 1 3/4 c. beef broth
  • 1 c. water
  • 1/2 c. dry red wine
  • 1 bay leaf
  • 1 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp. pepper
  • 1/2 c. elbow macaroni
  • 1 (9 oz.) pkg. frozen green beans

Method

  • Brown meat, add onions and garlic, saute 5 minutes.
  • Drain excess fat.
  • Add carrots, pinto beans, tomatoes (with liquid), beef broth, water, wine, bay leaf, salt, basil and pepper.
  • Heat to boil, cover and simmer 45 minutes, stirring occasionally.
  • Add macaroni, cook 10 minutes.
  • Add green beans, cook 10 more minutes. Serve with Parmesan cheese.
