- 1/2 lb. ground turkey
- 1/2 c. chopped onion
- 1 clove garlic
- 1/2 c. sliced carrots
- 1 (16 oz.) can pinto beans (drained)
- 1 (16 oz.) can tomatoes
- 1 3/4 c. beef broth
- 1 c. water
- 1/2 c. dry red wine
- 1 bay leaf
- 1 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp. pepper
- 1/2 c. elbow macaroni
- 1 (9 oz.) pkg. frozen green beans
Method
- Brown meat, add onions and garlic, saute 5 minutes.
- Drain excess fat.
- Add carrots, pinto beans, tomatoes (with liquid), beef broth, water, wine, bay leaf, salt, basil and pepper.
- Heat to boil, cover and simmer 45 minutes, stirring occasionally.
- Add macaroni, cook 10 minutes.
- Add green beans, cook 10 more minutes. Serve with Parmesan cheese.
