Ingredients

  • 2/3 c. hot water
  • 2 Tbsp. margarine
  • 2 c. stuffing
  • 1 c. crushed pineapple in syrup
  • 4 boneless chicken breasts
  • 1 medium green pepper, chopped
  • 2 Tbsp. brown sugar
  • 2 Tbsp. vinegar
  • 1/4 tsp. ground ginger

Method

  • Heat oven to 400°.
  • Mix hot water and margarine in bowl.
  • Stir in stuffing mix, pepper and 1/2 the pineapple with syrup.
  • Spoon stuffing in chicken and roll up tightly.
  • Secure with toothpicks. Place in 9-inch square pan.
  • Mix remaining pineapple and syrup, vinegar and ginger; spoon over chicken.
  • Bake for 30 minutes.
