- 2/3 c. hot water
- 2 Tbsp. margarine
- 2 c. stuffing
- 1 c. crushed pineapple in syrup
- 4 boneless chicken breasts
- 1 medium green pepper, chopped
- 2 Tbsp. brown sugar
- 2 Tbsp. vinegar
- 1/4 tsp. ground ginger
Method
- Heat oven to 400°.
- Mix hot water and margarine in bowl.
- Stir in stuffing mix, pepper and 1/2 the pineapple with syrup.
- Spoon stuffing in chicken and roll up tightly.
- Secure with toothpicks. Place in 9-inch square pan.
- Mix remaining pineapple and syrup, vinegar and ginger; spoon over chicken.
- Bake for 30 minutes.
