Ingredients

  • 1 1/2 c. scalded milk
  • 1 c. soft bread crumbs
  • 1 1/2 c. grated Cheddar cheese
  • 1 c. cooked macaroni
  • 3 eggs, separated
  • 1 Tbsp. chopped parsley
  • 1 Tbsp. chopped onion
  • 3 Tbsp. melted butter

Method

  • Pour hot milk over soft bread crumbs and cheese.
  • Cover until cheese melts, then add macaroni, beaten egg yolks, parsley, salt, onions and melted butter.
  • Beat egg whites until stiff but not dry.
  • Fold into mixture.
  • Pour into well-greased casserole and bake in a preheated 350° oven for 35 to 45 minutes (must be eaten immediately or it will fall).
  • Good dish for the Fridays of Lent.
