Ingredients

  • 6 plum tomatoes (1 lb.)
  • 3 to 4 cloves garlic, minced
  • 1 c. loosely packed basil, shredded
  • 1/2 c. chopped parsley
  • 1/2 c. olive oil
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. salt
  • 8 to 10 oz. pasta, linguine or spaghetti
  • Parmesan cheese to taste

Method

  • Dice tomatoes as small as possible.
  • In bowl, put tomatoes, then add all ingredients and toss well.
  • Let it marinade at least 2 hours at room temperature.
  • If it has been chilled, remove at least 2 hours before using.
  • Mix with cooked pasta.
