Ingredients
- 6 plum tomatoes (1 lb.)
- 3 to 4 cloves garlic, minced
- 1 c. loosely packed basil, shredded
- 1/2 c. chopped parsley
- 1/2 c. olive oil
- 1/2 tsp. red pepper flakes
- 1/2 tsp. salt
- 8 to 10 oz. pasta, linguine or spaghetti
- Parmesan cheese to taste
Method
- Dice tomatoes as small as possible.
- In bowl, put tomatoes, then add all ingredients and toss well.
- Let it marinade at least 2 hours at room temperature.
- If it has been chilled, remove at least 2 hours before using.
- Mix with cooked pasta.
