Ingredients

  • 1 cup Oil
  • 2 cups Granulated Sugar
  • 4 whole Eggs
  • 2 cups Mashed Ripe Bananas
  • 1/2 teaspoons Vanilla Extract
  • 1 cup Brown Rice Flour
  • 2/3 cups Potato Starch
  • 1/3 cups Tapioca Starch
  • 1 teaspoon Xanthan Gum
  • 1 Tablespoon Cinnamon
  • 2-1/4 teaspoons Baking Soda
  • 1/2 teaspoons Salt
  • 1 cup Chopped Walnuts

Method

  • Preaheat oven to 350°F. In a large bowl or the bowl of your stand mixer, mix together the oil and sugar. Add the eggs, bananas, and vanilla extract and mix well.
  • In a separate bowl, mix together all of the dry ingredients (everything else except the nuts) with a whisk. Add the dry mixture to the wet mixture and mix until blended. Add the nuts and stir until they are incorporated.
  • Divide mixture between two medium loaf pans and bake for 55-65 minutes or until a nice crust has formed and a toothpick comes out clean. Cool in pans and slice and serve. Or slice almost immediately and begin to devour. Your choice.
