Ingredients

  • 250 ml Soy milk
  • 2 to 3 tablespoons Matcha
  • 1 Egg
  • 2 tbsp Sugar
  • 1 Kuro-mitsu (brown sugar syrup or molasses)

Method

  • Combine sugar and matcha in a bowl and mix well.
  • Add a small amount from the measured soy milk, then mix in the eggs.
  • From here, stir to dissolve in the sugar as you add the rest of the soy milk in batches.

  • Chill in the fridge and serve.
  • Adjust the amount of matcha to taste.
