Ingredients
- 1/3 cup pine nuts
- 3 tablespoons butter
- 2 cups rice
- 4 cups boiling water
- 1 pinch cinnamon
- salt & pepper, to taste
- 2 tablespoons parsley, minced
Method
- Melt butter in saucepan and brown pine nuts, being careful to not burn.
- Add rice and stir for 2 minutes. Add water.
- Add cinnamon, salt and pepper.
- Bring to a boil. Cover and reduce heat. Simmer for 15 minutes or until liquid has evaporated.
- Add parsley and mix well.
