Ingredients

  • 1-1/2 lb. bone-in chicken breasts
  • 5 cups water, divided
  • 1/4 tsp. pepper
  • 1 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
  • 1 cup chopped celery
  • 2 chicken bouillon cubes
  • 1 cup chopped carrots
  • 1 cup chopped potatoes Safeway 2 pkg For $5.00 thru 02/09
  • 1-1/2 cups small broccoli florets
  • 1 cup instant white rice, uncooked
  • 1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes

Method

  • Place chicken, 4 cups (1 qt.)
  • water and pepper in large Dutch oven.
  • Bring to boil; cover.
  • Simmer on low heat 1 hour.
  • Remove chicken from pot.
  • Discard skin and bones.
  • Cut chicken into bite-size pieces; return to pot.
  • Add remaining water, onions, celery and bouillon.
  • Bring to boil.
  • Simmer on low heat 10 min., stirring occasionally.
  • Add carrots and potatoes; simmer 20 min.
  • ; stirring occasionally.
  • Add broccoli and rice; simmer 10 min.
  • Add VELVEETA; cook 5 min.
  • or until VELVEETA is melted.
