Ingredients

  • 1 c. peeled fresh tomatoes
  • 1/2 c. celery
  • 1/2 c. bell pepper
  • 1/2 c. cucumber, peeled
  • 1/4 c. green onion
  • 2 Tbsp. parsley
  • 1 tsp. chives
  • 1 small garlic clove
  • 1/2 tsp. sugar
  • 3 Tbsp. tarragon wine vinegar
  • 2 Tbsp. olive oil
  • 1/2 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 c. tomato juice

Method

  • Chop the first eight ingredients very fine.
  • Mix together. Then add remaining ingredients.
  • Chill well before serving.
  • May add additional tomato juice to thin if necessary.
  • Serves 10.
