Ingredients

  • 4 slices bacon
  • 2 to 3 green onions, sliced thin
  • 2 to 3 ribs celery, chopped very fine
  • 2 eggs, scrambled
  • 1/2 small size can Spam, diced small
  • 2 to 3 c. cooked rice

Method

  • Fry bacon until crisp.
  • Place on paper towels to drain.
  • In bacon grease, saute the green onions, celery and Spam.
  • When crisp-tender, add the cooked rice, scrambled eggs and crumbled bacon.
  • Cook 5 to 10 minutes, stirring occasionally.
  • Add soy sauce to taste.
