Ingredients
- 1 eggplant, pared and sliced
- 1 pot boiling salted water
- 1 egg
- 1 dash pepper
- flour
Method
- Boil eggplant in water until "mush".
- Drain and set aside to cool.
- Place in bowl; add 1 egg and mix well.
- Add enough flour to "hold together".
- Drop by spoonful of batter in hot grease.
- Fry until brown.
- Drain and serve.
