Ingredients
- 12 medium size potatoes (4 lb. all-purpose potatoes), peeled and quartered
- 1/2 c. butter or margarine
- 1 c. milk
- 3 large eggs, lightly beaten
- 1/2 c. grated Parmesan cheese
- 1 tsp. salt
- 1/4 c. chopped parsley
- 1/2 tsp. pepper
Method
- Heat oven to 350°.
- Lightly grease shallow 3-quart baking dish.
- Cook potatoes in water to cover for 15 to 20 minutes, until tender.
- Drain well.
- Add butter to potatoes and mash until butter melts.
- Add milk, eggs, cheese, parsley, salt and pepper.
- Mash until smooth.
- Spoon into prepared dish.
- (Can be made ahead to this point and refrigerated; bring to room temperature before baking.) Bake, uncovered, 45 to 50 minutes, until puffed and golden.
- Makes 10 cups or 12 servings.
