Ingredients

  • 12 medium size potatoes (4 lb. all-purpose potatoes), peeled and quartered
  • 1/2 c. butter or margarine
  • 1 c. milk
  • 3 large eggs, lightly beaten
  • 1/2 c. grated Parmesan cheese
  • 1 tsp. salt
  • 1/4 c. chopped parsley
  • 1/2 tsp. pepper

Method

  • Heat oven to 350°.
  • Lightly grease shallow 3-quart baking dish.
  • Cook potatoes in water to cover for 15 to 20 minutes, until tender.
  • Drain well.
  • Add butter to potatoes and mash until butter melts.
  • Add milk, eggs, cheese, parsley, salt and pepper.
  • Mash until smooth.
  • Spoon into prepared dish.
  • (Can be made ahead to this point and refrigerated; bring to room temperature before baking.) Bake, uncovered, 45 to 50 minutes, until puffed and golden.
  • Makes 10 cups or 12 servings.
