Ingredients

  • 2 c. all-purpose flour
  • 2 tsp. sugar
  • 1 1/4 tsp. salt
  • 2/3 c. salad oil
  • 3 Tbsp. cold milk
  • 4 c. firm fresh peach slices
  • 1 c. sugar
  • 1/2 tsp. cinnamon
  • 1/2 c. brown sugar, packed
  • 2 Tbsp. flour
  • 2 Tbsp. butter

Method

  • To make crust, sift first 3 ingredients together.
  • Combine oil and milk; blend well.
  • Add to flour mixture and mix well.
  • Remove 2/3 cup mixture and set aside.
  • Press remainder on bottom and sides of 9-inch pie pan.
  • Toss together peaches, 1 cup sugar and cinnamon; turn into crust.
  • To reserved 2/3 cup flour mixture, add brown sugar, 2 tablespoons flour and 2 tablespoons butter.
  • Mix well.
  • Crumble this topping over peach filling.
  • Bake at 425°
  • for 15 to 20 minutes; reduce heat to 350°
  • and bake until filling is bubbly in center and topping is golden.
