Ingredients
- 2 c. all-purpose flour
- 2 tsp. sugar
- 1 1/4 tsp. salt
- 2/3 c. salad oil
- 3 Tbsp. cold milk
- 4 c. firm fresh peach slices
- 1 c. sugar
- 1/2 tsp. cinnamon
- 1/2 c. brown sugar, packed
- 2 Tbsp. flour
- 2 Tbsp. butter
Method
- To make crust, sift first 3 ingredients together.
- Combine oil and milk; blend well.
- Add to flour mixture and mix well.
- Remove 2/3 cup mixture and set aside.
- Press remainder on bottom and sides of 9-inch pie pan.
- Toss together peaches, 1 cup sugar and cinnamon; turn into crust.
- To reserved 2/3 cup flour mixture, add brown sugar, 2 tablespoons flour and 2 tablespoons butter.
- Mix well.
- Crumble this topping over peach filling.
- Bake at 425°
- for 15 to 20 minutes; reduce heat to 350°
- and bake until filling is bubbly in center and topping is golden.
