Ingredients
- 2 lb. string beans
- 2 onions, chopped
- 3/4 c. olive oil
- 1 can tomato sauce
- 2 tsp. salt
- dash of pepper
- chopped parsley
- 2 potatoes, cut in quarters
- 2 carrots, sliced
- 1 c. water
Method
- Saute onions lightly in olive oil in large saucepan.
- Add tomato sauce; add salt and pepper and simmer for about 15 minutes. Add string beans and remaining ingredients.
- Cover and cook slowly for 1 hour or until tender.
