Ingredients

  • 2 sticks (1/2 lb.) butter (do not substitute margarine)
  • 2 c. granulated sugar
  • 6 eggs
  • 1/2 c. milk
  • 1 (12 oz.) box vanilla wafers, crushed
  • 1 (7 oz.) pkg. flaked coconut
  • 1 c. chopped pecans

Method

  • Cream butter and sugar together until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Add crushed wafers alternately with milk.
  • Add coconut and pecans and mix well.
  • Pour into a 12-cup greased tube pan or a fluted pan sprayed with plenty of nonstick spray. Bake in a preheated 300° oven for 1 hour and 45 minutes.
  • Cool completely before removing from pan.
  • This cake freezes well.
