Ingredients
- 2 sticks (1/2 lb.) butter (do not substitute margarine)
- 2 c. granulated sugar
- 6 eggs
- 1/2 c. milk
- 1 (12 oz.) box vanilla wafers, crushed
- 1 (7 oz.) pkg. flaked coconut
- 1 c. chopped pecans
Method
- Cream butter and sugar together until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add crushed wafers alternately with milk.
- Add coconut and pecans and mix well.
- Pour into a 12-cup greased tube pan or a fluted pan sprayed with plenty of nonstick spray. Bake in a preheated 300° oven for 1 hour and 45 minutes.
- Cool completely before removing from pan.
- This cake freezes well.
