Ingredients

  • 4 Med-Lg Flounder Fillets
  • (or two large sole fillets)
  • 8-10 Plum Tomatoes
  • 3 Dashes White Worcestershire
  • Sauce
  • 1 Med Onion diced
  • 2 Tbls Olive Oil
  • 1 1/2 Cups Long Grain Rice
  • 3 Cups Water
  • Salt and Pepper
  • Chopped Fresh Basil or Parsley

Method

  • Saute the chopped onion in the olive oil until soft. Chop and add the tomatoes. Season with Salt and pepper to taste and add the White Worcestershire Sauce. Cover and simmer until the tomatoes are soft with some chunky texture. Meanwhile, cook the rice in a sauce pan with lightly salted water, covered, until the water is absorbed and the rice is soft, then fluff with a fork.
  • When ready to serve place the fillets on top of the tomatoes, lightly salt and pepper, cover and simmer 4-5 minutes (until "white" throughout) .
  • Garnish with the chopped basil or parsley.
  • Serve with the rice.
