Ingredients

  • 1 stick (8 tbsp) butter, barely melted
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tbsp espresso powder
  • Pinch of salt
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1 cup all purpose flour
  • 3/4 cup semi-sweet chocolate chips
  • 1/3 cup sliced almonds

Method

  • - Preheat oven to 350 degrees. Grease or butter an 8x8 pan.
  • - Whisk together melted butter and brown sugar.
  • - Whisk in eggs, espresso powder, pinch of salt, vanilla and almond extracts.
  • - Stir in flour, followed by chocolate chips and sliced almonds.
  • - Spread batter evenly in 8x8 pan. Optional sprinkle of sliced almonds and chocolate chips on top.
  • - Bake for approximately 30 minutes or until center is minimally jiggly. Blondies should be gooey but maintain form after cooling. Makes 9-12 blondies.
