Ingredients
- 10 to 12 thighs
- flour
- margarine
- 1 can mushrooms
- 1/2 to 1 tsp. thyme
- 1 small onion
- 2 pieces bay leaf
- 2 strips bacon
- white wine
- rice
Method
- Coat thighs in seasoned flour.
- Fry in margarine until very brown.
- Put in small roaster pan with drippings.
- Add mushrooms and juice.
- Sprinkle thyme over it, along with onion (sliced), bay leaf and bacon.
- Add lots of white wine and cook slowly until tender at about 250°.
- Cook covered and keep adding wine if cocktail hour drags on.
- Serve over rice.
- Makes lots of good juice.
