Ingredients

  • 10 to 12 thighs
  • flour
  • margarine
  • 1 can mushrooms
  • 1/2 to 1 tsp. thyme
  • 1 small onion
  • 2 pieces bay leaf
  • 2 strips bacon
  • white wine
  • rice

Method

  • Coat thighs in seasoned flour.
  • Fry in margarine until very brown.
  • Put in small roaster pan with drippings.
  • Add mushrooms and juice.
  • Sprinkle thyme over it, along with onion (sliced), bay leaf and bacon.
  • Add lots of white wine and cook slowly until tender at about 250°.
  • Cook covered and keep adding wine if cocktail hour drags on.
  • Serve over rice.
  • Makes lots of good juice.
