- 1 lb. shrimp, minced
- 4 lb. ground beef
- 3 lb. ground pork
- 2 lb. carrots, shredded
- 2 onions, chopped
- 1 bag shiitake mushrooms, soaked and shredded
- 7 lb. bean sprouts, rinsed
- 1 pack (8 bundles) bean thread noodles
- 8 eggs
- 14 bags wrappers
- salt and pepper
Method
- Mix all together.
- Place spoonful on corner of wrapper, moisten edges with water or beer and roll them up.
- Fry in oil until light golden brown. Can freeze and re-fry to crisp them. Serve with hot mustard or sweet and sour sauce.
- Makes approximately 190 to 200 egg rolls.
