Ingredients

  • 1 lb. shrimp, minced
  • 4 lb. ground beef
  • 3 lb. ground pork
  • 2 lb. carrots, shredded
  • 2 onions, chopped
  • 1 bag shiitake mushrooms, soaked and shredded
  • 7 lb. bean sprouts, rinsed
  • 1 pack (8 bundles) bean thread noodles
  • 8 eggs
  • 14 bags wrappers
  • salt and pepper

Method

  • Mix all together.
  • Place spoonful on corner of wrapper, moisten edges with water or beer and roll them up.
  • Fry in oil until light golden brown. Can freeze and re-fry to crisp them. Serve with hot mustard or sweet and sour sauce.
  • Makes approximately 190 to 200 egg rolls.
