Ingredients

  • 2 c. granulated sugar
  • 1/2 c. light corn syrup
  • 1/4 tsp. salt
  • 1/2 c. water
  • 2 egg whites
  • 1 tsp. vanilla extract (almond or lemon extract may be used)
  • 3/4 c. candied cherries or 1 c. chopped nuts

Method

  • Dissolve sugar, syrup and salt over low heat, stirring.
  • Cook, without stirring, to 248° or to firm ball stage (or light crack stage, 265°).
  • Wash down with a damp cloth any crystals that may form on the sides of the pan during cooking.
  • Remove from heat and pour gradually over the stiffly beaten egg whites.
  • Add extract and continue beating until mixture will hold its shape when dropped by spoonfuls on wax paper.
