Ingredients
- 2 c. granulated sugar
- 1/2 c. light corn syrup
- 1/4 tsp. salt
- 1/2 c. water
- 2 egg whites
- 1 tsp. vanilla extract (almond or lemon extract may be used)
- 3/4 c. candied cherries or 1 c. chopped nuts
Method
- Dissolve sugar, syrup and salt over low heat, stirring.
- Cook, without stirring, to 248° or to firm ball stage (or light crack stage, 265°).
- Wash down with a damp cloth any crystals that may form on the sides of the pan during cooking.
- Remove from heat and pour gradually over the stiffly beaten egg whites.
- Add extract and continue beating until mixture will hold its shape when dropped by spoonfuls on wax paper.
