Ingredients
- 1 lb. fresh yellow squash
- 1/2 stick butter
- 1 tsp. sugar
- 1 egg
- 1/2 c. mayonnaise
- 1/2 c. chopped English walnuts
- 1 small chopped onion
- 1/2 c. grated Cheddar cheese
- bread crumbs
- salt and pepper to taste
Method
- Cook squash until tender.
- Drain.
- Add butter and mash with fork.
- Mix sugar, egg, mayonnaise, nuts, salt and pepper and cheese.
- Add squash.
- Pour into casserole dish and top with bread crumbs and dot with butter.
- Bake at 350° for 35 to 40 minutes.
