Ingredients

  • 1 lb. fresh yellow squash
  • 1/2 stick butter
  • 1 tsp. sugar
  • 1 egg
  • 1/2 c. mayonnaise
  • 1/2 c. chopped English walnuts
  • 1 small chopped onion
  • 1/2 c. grated Cheddar cheese
  • bread crumbs
  • salt and pepper to taste

Method

  • Cook squash until tender.
  • Drain.
  • Add butter and mash with fork.
  • Mix sugar, egg, mayonnaise, nuts, salt and pepper and cheese.
  • Add squash.
  • Pour into casserole dish and top with bread crumbs and dot with butter.
  • Bake at 350° for 35 to 40 minutes.
