Ingredients

  • 1 pkg. frozen or canned baby limas
  • 2 medium onions, chopped
  • 1 red pepper, chopped
  • 1 can cream of mushroom soup
  • 1/2 c. bean juice and water (mix together)
  • 1 c. sour cream
  • 1 1/2 tsp. curry powder
  • 1/2 c. croutons, crushed
  • 1 Tbsp. melted butter
  • 2 strips bacon, fried crisp and crumbled

Method

  • Cook limas as directed.
  • Drain and save liquid.
  • Combine onion, red pepper, soup and water in saucepan.
  • Heat thoroughly. Remove from heat; blend sour cream and curry powder into soup mixture.
  • Stir in limas.
  • Turn mixture into 2-quart casserole dish.
  • Combine crumbs with melted butter.
  • Add crumbled bacon. Sprinkle over mixture.
  • Bake uncovered at 350° for 25 minutes or until lightly browned.
