Ingredients

  • 1 1/2 cups crab meat drained, all bits of shell removed
  • 1 tablespoon lime juice fresh
  • 1/2 teaspoon lime zest grated
  • 1 each scallions, spring or green onions
  • 2 tablespoons parsley leaves minced
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon prepared mustard hot, prepared
  • 1 x red hot pepper sauce to taste
  • 2 tablespoons butter unsalted, melted
  • 16 each melba rounds
  • 1/2 cup swiss cheese grated

Method

  • Preheat broiler.
  • Combine crab, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot-pepper sauce.
  • Taste and adjust seasonings.
  • Brush melted butter on toast rounds and arrange in a single layerin a broiler pan.
  • Top each round with a portion of the crab mixture, then with 1 1/2 teaspoon cheese.
  • Broil until cheese is melted and crab mixture is hot.
