- 1 1/2 cups crab meat drained, all bits of shell removed
- 1 tablespoon lime juice fresh
- 1/2 teaspoon lime zest grated
- 1 each scallions, spring or green onions
- 2 tablespoons parsley leaves minced
- 1 teaspoon worcestershire sauce
- 1 teaspoon prepared mustard hot, prepared
- 1 x red hot pepper sauce to taste
- 2 tablespoons butter unsalted, melted
- 16 each melba rounds
- 1/2 cup swiss cheese grated
Method
- Preheat broiler.
- Combine crab, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot-pepper sauce.
- Taste and adjust seasonings.
- Brush melted butter on toast rounds and arrange in a single layerin a broiler pan.
- Top each round with a portion of the crab mixture, then with 1 1/2 teaspoon cheese.
- Broil until cheese is melted and crab mixture is hot.
