Ingredients

  • 1 1/2 c. cooking oil
  • 2 c. sugar
  • 4 eggs, separated
  • 4 Tbsp. hot water
  • 2 1/2 c. sifted cake flour
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 1/2 c. grated raw sweet potato
  • 1 c. chopped nuts
  • 1 tsp. vanilla flavoring
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. butter
  • 1 c. sugar
  • 3 egg yolks, beaten
  • 1/3 c. orange juice
  • 1 tsp. grated orange rind
  • 2 egg whites, stiffly beaten

Method

  • Cream the butter.
  • Add sugar; cream until light and fluffy. Add egg yolks one at a time.
  • Beat well.
  • Add sifted dry ingredients alternately with orange juice; beat well.
  • Add rind. Fold in egg whites.
  • Put into two 9-inch cake pans and bake at 375° for 25 to 30 minutes.
