Ingredients

  • 1 lemon, peel grated
  • juice of 1/2 lemon
  • 1 Tbsp. butter, melted
  • 1 c. finely crushed wheat crackers
  • 1/2 tsp. onion powder
  • 1/2 tsp. paprika
  • 1 1/4 lb. boneless chicken

Method

  • Combine lemon peel, juice and butter.
  • Separately combine crackers, onion powder and paprika.
  • Dip chicken in butter mixture.
  • Coat with crumb mixture.
  • Arrange on rack in shallow baking pan.
  • Bake uncovered at 400° for 35 minutes or until tender.
