Ingredients
- 3 tablespoons butter, unsalted
- 3 tablespoons flour, all-purpose
- 2 cups stock
- 1 1/2 cups milk
- 1/2 each onions chopped
- 3 cups broccoli florets chopped
- 1 x salt and black pepper to taste
Method
- In a large saucepan, melt the butter and add the flour.
- Stir constantly, and cook for about 1 minute.
- Pour in the milk and chicken broth, stir well and bring to a boil.
- Add the chopped onion and half of the broccoli.
- Bring to a boil, the reduce the heat to medium-low or low to maintain a gentle simmer.
- Simmer until the broccoli is cooked 9 to 11 minutes.
- Puree with a blender.
- Add the remaining half of broccoli into the soup and cook until the pieces are cooked but still slightly crisp, about 6 minutes.
- Season to taste with salt and black pepper.
