Ingredients

  • 3 tablespoons butter, unsalted
  • 3 tablespoons flour, all-purpose
  • 2 cups stock
  • 1 1/2 cups milk
  • 1/2 each onions chopped
  • 3 cups broccoli florets chopped
  • 1 x salt and black pepper to taste

Method

  • In a large saucepan, melt the butter and add the flour.
  • Stir constantly, and cook for about 1 minute.
  • Pour in the milk and chicken broth, stir well and bring to a boil.
  • Add the chopped onion and half of the broccoli.
  • Bring to a boil, the reduce the heat to medium-low or low to maintain a gentle simmer.
  • Simmer until the broccoli is cooked 9 to 11 minutes.
  • Puree with a blender.
  • Add the remaining half of broccoli into the soup and cook until the pieces are cooked but still slightly crisp, about 6 minutes.
  • Season to taste with salt and black pepper.
