- 3 cups rolled oats
- 12 cup almonds, chopped
- 12 cup shredded coconut
- 2 tablespoons white sugar
- 1 tablespoon unsweetened cocoa
- 1 pinch salt
- 6 tablespoons honey
- 2 tablespoons vegetable oil
- 12 cup bittersweet chocolate, finely chopped
Method
- Preheat the oven to 300 degrees.
- In a large bowl, combine the oats, almonds, coconut, sugar, salt and cocoa.
- Stir well to blend.
- In a small saucepan, warm the honey and oil over low heat, whisking occasionally.
- Until the honey is loose.
- Pour over the dry ingredients, and stir to combine well.
- Spread the mixture evenly on a rimmed baking sheet.
- Bake for about 20 minutes, or until golden.
- Stir halfway through the baking time.
- Cool completely.
- Add the chocolate and stir.
