Ingredients

  • 1 bunch fresh broccoli
  • 1 small onion, chopped
  • 1/2 jar small pimentos
  • 1 box fresh mushrooms
  • 1 qt. plus 1 c. milk
  • 2 Tbsp. flour
  • 1 Tbsp. chicken bouillon
  • salt and pepper
  • 1 pt. half and half or 1/2 pt. Coffee Rich

Method

  • Saute onion and mushrooms in a small amount of oil.
  • Add chopped broccoli and bouillon. Cover and simmer a few minutes. Add pimentos and milk. Simmer awhile longer. Take 1 cup cold milk and mix with flour.
  • Add to soup.
  • Cook until thickened.
  • Reheat slowly, if needed.
